with smooth, ivory colored 10 X 3 inch roots with a tender white flesh and a very small core. Attains size and thickness early and rarely produces side shoots. Excels in taste, possesses a high sugar content and stores exceptionally well. Perhaps the hardiest of all garden crops, parsnips don’t develop their sweet, nutty flavor until after enduring frosts and cold weather in fall. Can be overwintered for harvest as soon as soil thaws in spring.
